Surprisingly, I didn’t really bake much around the holidays. Usually I make a few batches of Christmas Cookies but alas, 2011 didn’t call for it. Sad though - I didn’t quite make 100 tablespoons of butter these past two months - almost though.
Caramelized Pineapple Scones & Cranberry Oatmeal Scones
First time making these the pineapple ones, and they have the right consistency due to the extra liquid from the pineapples. I thought caramelizing them would have evaporated enough liquid, but they turned out fine anyway - more muffin-like than scone-like but I think they were well received.
Tablespoons used: 5 tablespoons and 10 tablespoons, respectively
Running total: 314 tablespoons of butter
Winter Wonderland Cake
I make this cake every December at least once. It’s usually a chocolate cake and peppermint cream cheese frosting, but this year instead of doing regular chocolate I made it with red velvet. And yes, I have pastry boxes.

Tablespoons used: 12 for the cake, 4 for the frosting

Since I had the day off, I decided to make a fancy dinner one night. Cut a crazy amount of veggies as shown below.

Raisin Bran Muffins + Blueberry Muffins
I forgot how much I love raisin bran muffins - they are so delicious with butter (what isn’t really).
